Seth and I celebrated our 7th anniversary (already?) on Monday by taking the boys fishing. They had a lot of fun and Seth caught a trout that we kept to cook with the one that was already in our freezer. According to Tucker, it wasn’t a trout; it was a sprout. After Seth cleaned the fish, I set them on a piece of tinfoil over slices of onion and butter. Then, I lemon peppered the heck out of them and stuffed them with lime slices.

I put them in a 350 degree oven for 45 minutes and they smelled delicious!

When they were done, I cut a hole in one corner of the foil and poured the butter sauce into a bowl so that we could soak our fish in it. Yum!
Seth was taking the fish apart for the boys when Jackson decided that he wanted to try one of the eyeballs so we decided to let him give it a try.
 
They were a little difficult to get on a fork, so he ended up chasing them around his plate for a little while before resorting to using his hands.
He popped one in his mouth and chewed as we waited in suspense for the verdict.
Not bad! Jackson liked them so much that he ate another one. He wanted more, but I told him to finish his tater tot salad instead. The tater tot salad is his own creation. Whatever gets him to eat his greens I guess.
The eyeballs seemed to agree with him until I went to check on him a little later.

  1. hahahahahahahahahahaha that last picture REALLY tops the story!!!!!
    I will admit though you had me cringing during the story about the eyeball eating and chasing!
