Happy Thanksgiving

Here I am, baking again. This time it’s the anniversary cake. I made the middle layers this morning and now that we are back from my parents, I’m working on part of the top layer and part of the bottom layer. I’ve been taking pictures of the process, so depending on how the cake turns out, those should be up sometime next week. I am so nervous! I keep having visions of a cake that is horribly lopsided with frosting sliding all over the place. Don’t even get me started on how scared I am to torte and fill it!

Well, since it is Thanksgiving, I should post something that I am thankful for.

I am without a doubt thankful for my husband, Seth who is the nicest person I have ever met.

Then there’s Jackson and Tucker. Who wouldn’t be thankful for those little cuties?

And of course I am thankful that nobody noticed that my shirt was on backwards all day.

Crazy Kids!

I’m in charge of making the pies for Thanksgiving this year. Right now I am waiting for them to get out of the oven so that I can go to bed. I should be doing schoolwork since the rest of my week is going to be really busy, but this is so much more fun. Unfortunately, we will be short one pumpkin pie thanks to, you guessed who: Jackson.

I made one right before work tonight to get a head start and he decided to help. I can’t believe that he didn’t burn himself!
Oh well, I used a store bought graham cracker crust for that one, so it probably wouldn’t have been anything to write home about anyway. Rest assured that the other ones all have a homemade pastry crust.
Oh, did I mention that Tucker’s new favorite spot is on top of the kitchen table? Yep, if you’re ever looking for him check the table first.

Dad and Mom’s 30th wedding anniversary was this week, so we’re having an open house for them at the Milnor Methodist Church on Saturday. Silly me, I volunteered to make a cake for the party. I was hoping to make a similar one to their original cake, but the biggest cake pan that I can find in town is a 9″.
What the effenheim?
I know there are bigger pans out there, darn it!
My 10″ springform pan will have to do for now. Hopefully I can make a few of the layers early tomorrow morning. I’ll try to take pictures as I go along so that you can see how much time, effort, blood, sweat, and soup ladles Jackson put into helping me.
