Someone ate all the Christmas cookies.
To be honest, I only made one batch of spritz this year and let my family eat half of them before Christmas, but I hid the other half in the freezer and thought that no one would find them. Wrong. Jackson found them and hid in his room to eat them.
So, I made him help me with a batch of Rocky Road Fudge to make up for the lack of cookies at Christmas.
We started by getting our ingredients ready. The pecans are from someone at work who traded them for a promise of lefse.
Back to the fudge. I lined a glass dish with foil and Jackson wiped it down with olive oil to keep the fudge from sticking.
Then came the fun part! Dumping the chocolate chips into the bowl,
and adding the sweetened condensed milk. Jackson had never tried sweetened condensed milk and it pretty much rocked his world.
Stick it in the microwave for a minute, stir,
and back in the microwave for 30 seconds and another stir.
Our local gas station doesn’t stock the mini marshmallows and I was too lazy to run into town for them, so we worked with what we had and cut them up into quarters.
When the chocolate chips melted, we dumped in some vanilla,
threw in some pecans,
and stirred the marshmallows in too.
Jackson had to try a marshmallow just to be sure that it was okay.
Then, he spread the mixture in the prepared pan.
But, I think licking the spatula was his favorite part.
The fudge turned out great and we can’t stop eating it!
