Here’s the cake-all finished! I was so worried that something would happen to it on the way out to Milnor! This picture is of the bottom layer because I wasn’t fast enough with my camera to get a picture of a layer that wasn’t squished. The three fillings starting from the bottom were: Lemon curd, Coconut cream cheese frosting, and Pineapple filling. I frosted the outside of the cake with the coconut frosting, but left out the coconut flakes so that the exterior would look smoother. As you can see from the pictures, I wasn’t too succesful with the smooth part.

Eddy’s girlfriend, Bethany, was such a good sport – she even let Mom put the veil on her. Isn’t she cute? I think wedding attire suits her (wink, wink, Eddy).

Seth packed the top two layers in a cooler with towels and cutting boards. The bottom layer didn’t fit, so I held it on my lap. Somehow we made it there without anything getting getting too smashed!
It looked SO good Anna and it tasted great too! 😀 And I don’t really even like coconut that much!
